A new Northend neighborhood market and butcher shop is coming to Bogus Basin Rd.
Husband and wife David and Katie Gonzalez have been hard at work transforming the former Valere Salon & Spa into Bluffside Provisions & Butchery — a shop specializing in hand-curated hand-cut premium quality beef, chicken, and pork.
“It’s been a complete gut job,” David Gonzalez said. “We are putting a lot of time and effort into making this dining area really cozy, really comfortable. It’s not going to be your typical, sterile white, hard colors, bright light butcher shop. It is going to be warm.”
Bluffside will also offer an in-dining experience with a deli counter serving about 10 different craft sandwiches and sides like potato and mac salad. A selection of craft beer will be available to enjoy along with an extensive wine program offering regional and European wines by the glass or bottle.
“We want to make you feel welcome, sit down and have your lunch,” Katie Gonzalez said. “Stay awhile, have your beer or wine there. We’re going to have a beautiful dining room, a little lounge area, it’s kind of that one-stop-shop. It’s not going to be a giant market.”
‘It’s my dream’
David drew his inspiration for Bluffside from his upbringing in rural Bakersfield, California.
“A lot of my friends and family lived on ranches, and I just have happy childhood memories of barbecues and family gatherings.”
David went on to work in several butcher shops and participate in competition barbeques. Katie has worked in the restaurant and hospitality industry for 15 years.
“We have two little boys and to be able to build this and leave a legacy for them, and have them work for us in the summers, it’s a dream,” Katie said. “It’s my dream coming to a reality.”
David added that Bluffside’s staff also has over 25 years of retail butcher shop expertise.
“Our main focus is really going to be customer service and that’s what’s going to set us apart from big box stores is forming those relationships with our customers,” David said.
David and Katie are shooting for an opening date of late August to early September. Tentatively, shop hours will be from 10 a.m. to 6 p.m. Tuesday through Saturday. However, during ski season, Bluffside will run specials like 10-15% off lunch with proof of a lift ticket and likely be open on Sundays.
“There needs to be these smaller markets around,” David said. “There’s such a high population right now, and we’re just hoping that we can really become a part of the community and be that staple. A quick, easy, in and out, ready to go.”
